  • ⅓ cup evaporated milk
  • ⅓ cup light corn syrup
  • 3 tablespoons coconut oil, softened or melted
  • ¼ teaspoon food-grade peppermint essential oil or 1 teaspoon peppermint extract
  • 1½ pounds (680g) bittersweet or semisweet baking chocolate, chopped
  • Crushed peppermint candies for sprinkling (optional)

Directions:

  1. Create the Mint Filling: Beat together powdered sugar, evaporated milk, corn syrup, coconut oil, and peppermint in a large bowl until well combined.
  2. Shape and Chill: Form the mixture into two disks, wrap in plastic, and refrigerate for 30 minutes.
  3. Roll and Cut: On a powdered sugar-dusted surface, roll each disk to ¼-inch thickness and cut into 1⅞-inch rounds.
  4. Freeze the Rounds: Place cut patties on parchment-lined baking sheets and freeze until firm, about 30 minutes.
  5. Prepare the Chocolate: Melt chocolate using the microwave at 50% power, stirring at 1-minute intervals until smooth.
  6. Dip and Coat: Using a fork, dip each frozen patty in melted chocolate, tap off excess, and place on parchment paper.
