  • ½ cup unsalted butter, cubed (113g)
  • 1 can (14 oz) sweetened condensed milk (396g)

Biscoff Cream Cheese Buttercream:

  • ½ cup unsalted butter, room temperature (113g)
  • 2 ounces cream cheese, room temperature (56g)
  • 1½ cups confectioners' sugar (180g)
  • 1 teaspoon pure vanilla extract
  • 4 Biscoff cookies, crushed (31g)

Cookie Butter Drizzle (Optional):

  • 1 tablespoon cookie butter spread (15g)

Directions:

  1. Prepare the Pan: Line an 8x8 baking pan with parchment paper, leaving overhang for easy removal. A 9x9 pan works too.
  2. Create the Base: Process graham crackers and Biscoff cookies into fine crumbs. Transfer to a large bowl and mix with kosher salt.
  3. Make the Binding Mixture: Heat butter and sweetened condensed milk over low heat until butter melts. Pour over crumbs and mix thoroughly.
  4. Form the Base Layer: Press mixture firmly into prepared pan. Refrigerate while preparing buttercream.
  5. Whip the Buttercream: Beat butter and cream cheese for 3-4 minutes until smooth. Add confectioners' sugar and vanilla, mix until creamy. Fold in crushed cookies.
