Follow these simple steps to create a soup that’s bursting with flavor and perfect for any meal.

Pro Tips for the Perfect Chickpea Soup:

  1. Sauté for Depth of Flavor: Properly browning the sausage adds a rich base to your soup.
  2. Deglaze with Wine: Use wine to lift the fond from the pot, which enhances the soup’s flavor.
  3. Thicken with Pureed Chickpeas: For a creamier texture, puree some of the chickpeas with broth before adding them back to the pot.
  4. Simmer to Perfection: Allow the soup to simmer gently to meld the flavors together beautifully.
  5. Finish with Freshness: Stir in kale at the end of cooking to keep its color and texture vibrant.
